Thai Curry : Volcano Chicken

Ingredients A (cut into pieces)

  • Salt, to taste
  • Pepper, to taste
  • 1 teaspoon coriander powder
  • 1 teaspoon coriander powder
  • 1 teaspoon chili powder
  • 1 egg
  • 100g multi-purpose crispy flour

Ingredients B (shredded)

  • 150g bangkuang
  • 150g cucumber

Ingredients C

  • Thai red sweet chili sauce, to taste
  • 2 tablespoons roasted peanut (chopped)
  • 30g meat floss

Method for Cooking Volcano Chicken:

  1. Mix Ingredients A and marinate for 1 hour. Coat with multi-purpose crispy flour.
  2. Heat up oil for deep frying, put in chicken and deep fry until golden brown.
  3. Arrange fried chicken on Ingredients B and pour Ingredients C on top.


Coat chicken with crispy flour and put it in the fridge before deep frying to make it crispier.
