Thai Curry : Roast Chicken with Lemongrass


Ingredients A

  • 1.5kg whole chicken (make slashes on chicken)
  • 50g sweet basil leaves
  • 5 Thai lime leaves
  • 1 lime

Ingredients B (blended)

  • 6 stalks lemongrass
  • 100g shallots
  • 1 inch turmeric
  • 1 slice galangal
  • 2 stalks coriander roots

Ingredients C

  • 1 teaspoon coriander powder
  • 1 tablespoon chili paste
  • 1 tablespoon sugar
  • Salt, to taste
  • Black pepper, to taste

Method for Cooking Roast Chicken with Lemongrass:

  1. Mix Ingredients B and C, rub it all over inside and outside chicken.
  2. Put sweet basil and lime leaves into chicken stomach. Marinate for 2 hours.
  3. Arrange chicken into oven, bake each side at 200C for 20 minutes or until cooked. Remove and cut into pieces, squeeze lime juice and serve.


Do not add garlic as it will taste bitter when roasted.
