Malaysian Curry : Pork Ribs Curry


Ingredients A:

  • 600g pork ribs (chop into thick slices)
  • 700ml water
  • 3 potatoes (cut into wedges)
  • 1 tomato (quartered)
  • 5 tablespoons oil

Ingredients B:

  • 4cm cinnamon stick
  • 1 star anise
  • 3 cloves
  • 4 cardamoms (split and use seeds only)
  • 2 stalks lemon grass (smashed)
  • 2 stalks curry leaves

Spice Ingredients C : Finely Ground

  • 8 shallots
  • 4 cloves garlic
  • 5g fresh chilies
  • 3 tablespoons meat curry powder
  • ½ teaspoon belacan stock granules

Ingredients D:

  • 150ml plain yoghurt
  • 200ml coconut milk
  • Ingredient E:
  • 1 pandan leaf (knotted)
  • 3 kaffir lime leaves
  • Seasoning:
  • Salt to taste
  • A little pepper

Method for Cooking Pork Ribs Curry:

  1. Put pork ribs in 700ml water. Bring to boil then simmer and cook until meat is 60% cooked.

  2. Heat oil and sauté ingredients B until fragrant. Add in Ingredients C and continue to fry until aromatic.

  3. Put in precooked ribs together with the stock. Add in potatoes and tomato. Cook for 5-10 minutes.

  4. Add Ingredients D and E. Cover and cook for a while.

  5. Adjust with seasoning. Simmer until meat and potatoes are tender.

  6. Dish out and serve.
