Malaysian Curry : Curry Crab


Ingredients A

  • 1 crab (approx. 600-800g)
  • 1 tablespoon curry powder
  • 100g lady's finger, sectioned
  • 1 tomato, cut into wedges
  • 1 onion, cut into pieces
  • Some curry leaves
  • 250ml coconut milk
  • 1 teaspoon salt

Ingredients B (Paste)

  • 2 cloves garlic
  • 5 shallots
  • 2 stalks lemon grass, mashed
  • 1 tablespoon chili paste


Method for Curry Crab :

  1. Wash the crab, remove the shell and chop into pieces. Crack the pincers and legs. Marinate crab with curry powder for 30 minutes.
  2. To make Paste: Place garlic, shallots and lemon grass into a food processor and blend well. mix with chili paste until a paste is formed.
  3. Heat wok with some oil, fry the ground paste and curry leaves until fragrant.
  4. Add marinated crab. Switch to high heat and stir-fry until cooked. Add some water (should cover the crab) and salt.
  5. Cover with lid and cook for 15 minutes using medium heat. Add coconut milk and cook until the gravy is thickened. Dish up.

Tips: You can blend 5 dried chilies to replace the chili paste.
