Indonesian Curry : Barbeque Prawns with Pandan Leaves

Ingredients A

  • 10 big prawns
  • 10 pieces pandan leaves
  • 10 toothpicks
  • 2 tablespoons oil

Ingredients B (blended)

  • 50g shallots
  • 20g garlic
  • 2 stalks lemongrass
  • 1 slice galangal

Ingredients C

  • 1½ tablespoons chili paste
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1 tablespoon oil

Method for Cooking Barbeque Prawns with Pandan Leaves:

  1. Remove prawn shells (only center part) and leave the head and tail intact. Mix with oil.
  2. Mix Ingredients B and C, marinate prawns for 15 minutes.
  3. Wrap prawns with pandan leaf and skewer with toothpick.
  4. Arrange in oven, bake at 200C for 10 minutes.


This dish can be prepared by frying or deep frying besides grilling.
