Indian Curry : Indian Style Crab Curry

Ingredients A :

  • 2 flower crabs (cut into pieces)
  • 100ml thick coconut milk
  • 500ml thin coconut milk
  • 150g brinjals (cut into wedges)
  • 3 long beans (cut into 4cm lengths)
  • 4-5 tablespoons oil

Ingredients B :

  • 2 stalks curry leaves
  • 1 star anise
  • 3 cardamoms
  • 4cm cinnamon stick
  • 1 teaspoon mustard seeds
  • 1 stalk lemon grass (smashed)
  • 2 pieces dried tamarind skin (assam gelugor)

Ground Spice : mix with water into paste

  • 6 shallots
  • 3 cloves garlic
  • 3 slices galangal
  • 2cm fresh turmeric
  • 5 dried chilies
  • 3 red chilies
  • 2 tablespoons fish curry powder

Seasoning :

  • ½ teaspoon salt
  • 1 teaspoon chicken stock granules
  • ½ teaspoon sugar or to taste
  • 1 tablespoon fish sauce

Method for Cooking Indian Style Crab Curry:

  1. Heat oil and sauté ingredients B until fragrant. Add in ground spice and continue to fry until fragrant.
  2. Add in crabs, brinjals and long beans. Pour in thin coconut milk and bring to a boil.
  3. Add thick coconut milk and seasoning. Cook to a boil again. Dish out and serve immediately.
