Indian Curry : Indian Mutton Curry

Ingredients A :

  • 1kg boneless mutton
  • 2 onions, shredded
  • 4 sprigs curry leaves
  • 2 teaspoons turmeric powder
  • 2 teaspoons curry powder
  • 300ml yogurt
  • Some salt

Ingredients B (Paste) :

  • 7 green chilies
  • 10 cloves garlic
  • 4 onions
  • 35g ginger
  • 5 cardamoms
  • 40g cashew nuts
  • 1 litre water

Spices :

  • 2 cinnamon sticks
  • 10 cardamoms
  • 5 cloves
  • 2 teaspoon fennel seed

Method for Cooking Indian Mutton Curry:

  1. To make Paste: Place Ingredients B into a food processor and blend until a fine paste is formed. Remove and set aside.
  2. Rinse and cut mutton into pieces. Set aside.
  3. Heat wok with some oil, add Spices. Stir-fry until popped. Add onions and curry leaves. Stir-fry briefly.
  4. Add mutton, ground paste, turmeric powder and curry powder. Mix well. switch to low heat and simmer for 45 minutes or until the mutton is tender. Stir occasionally.
  5. Lastly, add yogurt and salt. Bring to boil. Serve.
