Indian Curry : Indian Coconut Crisp

Ingredients A

  • 100g rice flour
  • 60g plain flour
  • 1 teaspoon baking powder

Ingredients B

  • 50g shredded coconut
  • 4 shallot slices
  • ½ teaspoon coriander powder
  • Salt, to taste
  • Black pepper powder, to taste

Method for Cooking Indian Coconut Crisp:

  1. Mix Ingredients A and B, stir in 150ml water to form a thick batter.
  2. Heat oil for deep frying, scoop in thick batter, deep fry until golden brown.
  3. Cut into pieces and mix with Indian rojak.
