Indian Curry : Curry Crab

 

Ingredients A

  • 2kg crab
  • 200ml coconut milk
  • Ingredients B
  • 200g shallots
  • 100g garlic
  • 2 candlenuts

Ingredients C

  • 1 tablespoon coriander powder
  • 2 stalks lemongrass
  • 4 tablespoons curry powder
  • 2 tablespoons chili paste
  • 1 inch cinnamon
  • 5 stalks curry leaves
  • Some water

Seasonings

  • 2 tablespoons sugar
  • Salt, to taste

Method for Cooking Curry Crab:

  1. Blend all Ingredients B. Mix ingredients B and Ingredients C with sugar. Stir-fry with 5 tablespoons oil in pot until fragrant.
  2. Add in crab and stir fry well, cover to cook until steam appears. Reduce to medium heat and simmer for 5 minutes.
  3. Add in salt to taste and coconut milk, stir evenly. Remove and serve.

Tip:

You may replace crabs with big prawns.
