Curry Paste : Malaysian Curry Paste

Ingredients A

  • 300g shallots
  • 150g garlic
  • 3 candlenuts

Ingredients B

  • 300g curry powder
  • 1 teaspoon turmeric powder
  • 5 tablespoons chili paste
  • 3 tablespoons coriander powder
  • 10 stalks lemongrass
  • 10 stalks curry leaves
  • ½ cup water


  • 100g sugar
  • salt, to taste

Method for Cooking Malaysian Curry Paste:

  1. Mix ingredients A, Ingredients B and Seasonings in pot, pour in 1½ cup of oil.
  2. Stir-fry in medium to low heat until fragrant.

To cook meat curry you may use Meat Curry Powder. But to cook seafood curry you have to use Fish or Prawn Curry Powder.
