Curry Paste : Indonesian Curry Paste

 

Ingredients A

  • 300g shallots
  • 100g garlic
  • 2 pieces candlenuts
  • 1 inch turmeric
  • 50g dried shrimps
  • 1 tablespoon grill belacan

Ingredients B

  • 600g chili paste
  • 2 tablespoons coriander powder
  • 3 stalks lemongrass
  • 5 salam leaves

Seasonings

  • 3 tablespoons sugar
  • Salt, to taste


Method for Cooking Indonesian Curry Paste :

  1. Blend all Ingredients A.
  2. Mix Ingredients A, Ingredients B and Seasoning in a pot, pour in 1½ cup of oil.
  3. Stir-fry all the mixture in medium to low heat until fragrant.

Tip:

You can buy salam leaves at Malay wet markets.
