Curry Paste : Indian Curry Paste

Ingredients A

  • 200g shallots
  • 100g garlic
  • 1 inch ginger

Ingredients B

  • 2 inch cinnamon stick
  • 2 star anise
  • 3 cloves
  • 1 teaspoon fennel
  • 1 teaspoon cumin
  • 1 teaspoon mustard seed
  • 5 stalks curry leaves
  • 150g curry powder
  • 1 tablespoon coriander powder
  • 1 teaspoon halba seeds
  • 1 inch turmeric
  • ½ cup water


  • 1 tablespoon sugar
  • Salt, to taste

Method for Cooking Indian Curry Paste :

  1. Blend Ingredients A. Mix Ingredients A, Ingredients B and Seasonings in pot, and then pour in 1 cup of oil.
  2. Stir in medium to low heat until fragrant.


You can cook several portions of Indian curry paste at one time, leave to cool and save in boxes, then keep in freezer. Just take out from freezer and cook with other Ingredients when you want to use it.
